About the spelt miche

The miche is our weekend loaf. It is baked once a week, on Friday night, in a quantity that rarely lasts past half eleven on Saturday. If you want one, pre-order it.

Half of the flour is wholegrain spelt from a farm eight miles up the valley. Spelt has a softer, more fragile gluten than modern wheat, so the dough is mixed gently and shaped once, tightly, before a long cold proof. The result is a nutty loaf with a tender crumb and a thick, chewy crust.

It is big on purpose. One miche feeds a family across a weekend, and it tastes better on Sunday than on Saturday.

“The Calder Country is the only bread in the house that is still good on day five. We have stopped buying sliced bread altogether.”
