About the seeded rye tin

This is the loaf for people who want bread to be a meal. Close to a third of the dough is seed: sunflower, pumpkin and golden linseed, soaked overnight in hot water so they swell before they meet the rye and do not draw moisture out of the crumb.

It bakes low and long in a lidded tin, which gives it a soft crust and a dark, moist middle. It slices well even on the day it is baked, which is unusual for rye, and it freezes perfectly. Slice it first, then toast straight from the freezer.

A lot of our Saturday regulars buy two: one for the week, one for the freezer.

“I pre-order the miche and four croissants every Friday night. Saturday I walk past a queue of thirty people, give my name and I am out in a minute.”
