About the rosemary focaccia

Focaccia is the bake that feeds the bakehouse at lunchtime, and it has become one of the counter’s best sellers. The dough is very wet and spends a full day in the cold room before it is tipped into oiled trays, dimpled by hand and topped with rosemary and flaky salt.

It is baked in the deck oven directly on the stone, so the base fries in its own oil and comes out crisp while the middle stays soft and open.

We sell it by the quarter tray. Ask at the counter and we will cut it into squares for a party or a picnic.

“My son is allergic to sesame and they walked me through every label without being asked twice. That matters more to me than the bread, and the bread is excellent.”
